The Food & Beverage Director is responsible for the leadership, coordination, and administration of all food and beverage departments. This includes optimizing profitability, maintaining high-quality service, ensuring compliance with gaming and alcohol regulations, and supporting long-term business growth. The director collaborates with cross-functional teams, develops operational plans, and ensures that all food and beverage offerings meet brand expectations and industry standards.
- Lead and coordinate all food and beverage operations to maximize profitability and guest satisfaction.
- Establish and manage short- and long-term performance, revenue, and profit objectives.
- Assist in menu development and evaluation across all outlets.
- Address guest concerns and feedback promptly and professionally.
- Determine and maintain appropriate staffing levels across departments.
- Oversee financial performance, including budgeting, cost control, and inventory management.
- Enforce company policies, procedures, and quality standards.
- Contribute to annual business plans and budget development.
- Create and present financial and operational plans, including variance explanations.
- Stay informed on industry trends, consumer preferences, and competitive market offers.
- Identify and mitigate compliance risks related to food safety, liquor laws, and gaming regulations.
- Ensure adherence to all sanitation, food handling, and alcohol service requirements.
- Partner with marketing to plan and execute food and beverage promotions and events.
- Bachelor’s degree in hospitality or related field, or 10+ years of food and beverage management experience; five years at the director’s level preferred.
- Ability to obtain SERV Safe certification.
- Ability to obtain a state-issued Alcoholic Beverage License.
- Ability to obtain and maintain required gaming authority licensing.
- Proven leadership experience managing multiple departments and teams.
- Strong financial acumen, including budgeting, cost control, and forecasting.
- Excellent communication, problem-solving, and customer service skills.
- Ability to work varied shifts, including nights, weekends, and holidays, and lift up to 50 lbs.
