The Senior Food & Beverage Manager is responsible for coordinating, supervising, and optimizing all food and beverage activities. Working closely with department managers and cross-functional teams, this leader drives service excellence, financial performance, and adherence to company standards. The role requires strong operational oversight, team development, and the ability to respond quickly to guest needs and market trends.
- Supervise and manage multiple food and beverage departments through department managers.
- Collaborate with internal partners to maximize profitability, attract new guests, and strengthen customer loyalty through superior service.
- Set and maintain short and long-term performance and profit objectives.
- Assist in developing and evaluating menu offerings across all outlets.
- Respond promptly to guest concerns, complaints, and suggestions.
- Determine and maintain appropriate staffing levels.
- Oversee financial performance, including budgeting, food and labor cost control, and inventory management.
- Enforce company policies, procedures, and quality standards.
- Support the development of annual budgets and business plans.
- Coach and develop team members to enhance service quality, performance management, and customer service excellence.
- Develop and oversee financial, operational, and capital expenditure plans aligned with property strategy.
- Present updates on plans and provide explanations and solutions for variances.
- Stay informed on industry trends, consumer preferences, and competitive market offers.
- Identify compliance risks and implement strategies to reduce or eliminate them.
- Ensure compliance with liquor laws and all food handling and sanitation standards.
- Partner with marketing to plan and execute food and beverage promotions and events.
- Work in varied environments, including office settings and casino floors, with exposure to smoke and noise.
- Bachelor’s degree in hospitality or related field, or 10+ years of food and beverage management experience, or an equivalent combination of education and experience.
- Ability to obtain SERV Safe certification.
- Ability to obtain a state-issued Alcoholic Beverage License.
- Ability to obtain and maintain gaming authority licensing if required.
- Ability to work varied shifts, including weekends and holidays.
- Ability to lift up to 50 lbs.
- Strong leadership, communication, and problem-solving skills.
- Proven experience managing multiple departments and driving operational performance.
- Solid financial acumen, including budgeting, cost control, and forecasting.
